Caprese Salad

This salad is what summer tastes like! It’s quick and easy and the ingredients are readily available in the summer. The combination of fresh flavors will get you tons of compliments if you serve it at your next summer BBQ. I took it to a pot luck picnic with friends from a business group and it won first prize by a landslide! (Serves 4-6)


• 4-6 garden fresh beefsteak tomatoes, sliced
• ½ cup loose, chopped, basil
• 2 large balls of sliced mozzarella
• 3-4 tbsp good quality organic olive oil
• 3 tbsp balsamic vinegar
• Sea salt and fresh ground pepper to taste


Arrange alternating slices of tomatoes and sliced mozzarella on a platter and sprinkle with chopped basil.

Drizzle olive oil and balsamic vinegar over tomatoes and cheese.

Finish with sea salt and fresh ground pepper.
