Chilled Mint Pea Soup with Coconut Cream


1 1/2 Ttsp unsalted butter
1 onion (diced)
2 cups vegetable broth
3 springs of mint
1 pound petit green peas
1 cup coconut cream


1. In a medium saucepan, melt butter. Add onions and cook until softened.

2. Add in the vegetable broth and mint. Increase heat and bring to boil.

3. Add the peas and season with salt and pepper to taste. Return to rolling boil and then reduce heat to simmer.

4. Simmer five minutes until peas are tender but not mushy.

5. Purée and blend the mixture with coconut cream in a blender until smooth.

6. Allow cooling and then chill to serve cold.

7. Garnish with coconut cream if desired.
