Crockpot Flank Steak Fajitas

Crockpot Flank Steak Fajitas

Total time:  6 hours 15 mins
Serves: 4 – 6


  • 2 lbs. flank steak (or flap meat)
  • 1 white onion, thinly sliced
  • 1 red pepper, thinly sliced
  • 1 jalapeño, finely chopped
  • 4 garlic cloves, crushed
  • 2 tsp. chili powder
  • ½ tsp. ground cumin
  • 2 tsp. sea salt
  • 1 tbsp. lemon juice


  1. Cut meat across the grain into ½ in. diagonal strips. *When you buy your meat have the butcher slice your meat for you.
  2. Place meat in slow cooker and top with onion, and pepper.
  3. In a small bowl combine garlic, jalapeño, chili powder, cumin, salt, and lemon juice.
  4. Pour mixture over meat, onions and peppers.
  5. Cover and cook on low for 6 -7 hours.

Great over riced cauliflower with salsa and sliced avocado!
